I Review 15,000 PPE Items a Year. This 48-Hour Food Plant Emergency Changed What I Inspect First
The Tuesday before Thanksgiving, I was packing up to leave when our plant safety coordinator called.
"We've got a client in a real bind. FDA audit in 48 hours. Their old safety officer quit, and they need a refresh on PPE. They asked for 'any safety glasses' and 'food-safe latex gloves.' Can we help?"
"Yes," I said. "But not with those descriptions."
I'm a quality/compliance manager at a PPE distributor. I review every inbound shipment before it reaches customers—roughly 15,000 items a year. In Q1 2024, I rejected a small batch of supposedly impact-rated glasses because the ANSI marking was printed on a sticker that peeled off. That might sound picky. But if a compliance officer or an official can't verify a product's rating, it doesn't matter how good it actually is.
The Problem Wasn't the Checklist
The client made packaged salads. Big production floor, wet surfaces, cold chillers, a lab where they checked samples. Their existing PPE looked okay from a distance. But once we went through their list, the real issues were not the obvious ones.
Most buyers focus on lens tint and frame style. They completely miss the anti-fog coating and the impact rating. The question everyone asks is, "Do these look professional?" The question they should ask is, "Will they still be fog-free when someone walks from a 34-degree cooler into a steaming wash-down room?"
The lab team needed lab safety glasses for chemical checks and sample prep. They didn't need a welding shade. But they did need lenses that wouldn't fog or scratch.
What We Actually Ordered

Here's what I had to explain: A latex glove is food safe only if it's manufactured to meet FDA requirements for food contact. In the US, that means the gloves are compliant with FDA food-contact regulations—the relevant sections under 21 CFR Part 177 for rubber and polymer-based materials—and, in practice, the box will say food-safe or FDA-compliant for food-contact use. Many latex exam gloves are tested for medical/exam use first, not for food contact. The markings matter.
"If the box doesn't say it, you can't prove it in an audit." That's not a slogan. That's the difference between a passing observation and a corrective action.
This myth has roots. Twenty years ago, if you said "disposable latex gloves," it was a safe default for food prep. Today, gloves are made from so many formulations—nitrile, chloroprene, vinyl, polyethylene, and different latex compounds—that the base material doesn't guarantee food-contact status. You need the marking.
So glad we double-checked that pallet of exam gloves. We were one approval away from a really awkward audit.
The Cost of Certainty
Here's where the money part gets real. The client needed everything in 48 hours. Standard shipping would have taken five days. We could have shipped "close enough" gloves and generic glasses. Maybe they would have passed. Maybe not. But "maybe" has no place in an audit.
In March 2024, I paid $430 for rush shipping on a different order. It hurt. But the alternative was missing a $15,000 client event. This time the numbers were bigger: losing the contract would have cost the client hundreds of thousands of dollars. The rush fee became background noise.
I do not like paying for "guaranteed" delivery when standard would do. But I have learned to recognize when I'm not paying for speed—I'm paying for certainty. The anti-fog coating we verified, the ANSI and ASTM markings we checked, the food-contact labels we confirmed: those gave us a defensible position. A cheaper product from a less documented supply chain would not have done that.
What Happened at the Audit
The audit came and went. They got one minor observation about a missing glove dispenser label, but nothing related to PPE. The food-safe glove boxes we labeled probably saved them from a bigger finding.
There's something satisfying about that. After the stress, the calls, and the last-minute delivery, seeing the team still wearing the anti-fog glasses at the end of the shift—that's the payoff.
What I Now Inspect First
Since that week, I've added a few things to my inspection routine:
- If it's a safety glass, I look for the ANSI Z87.1-2020 marking on the lens or frame. If it's on a sticker, I reject it.
- If it needs to be anti-fog, I don't trust the box. I run a quick steam test on a sample.
- If it's a boot, I check for the ASTM F2413-18 marking and outsole pattern, not just the brand.
- If it's a glove for food handling, I look for a food-contact statement on the box. "Latex" is not enough.
So, are latex gloves food safe? Yes—if they're marked and verified as food-contact-compliant. No, if you're only going by the material name. And in an emergency, don't buy the cheapest unknown. Buy the one with verifiable markings, even if it costs more. The certainty is worth every dollar.
